It is St. Martin's Day, we'll eat chestnuts, we'll taste the wine.
The feast of St Martin is an ancient custom, celebrated all over Europe. It's a time of thanksgiving for the harvest bounty, and of counting your blessings before the advent of winter.
In Germany, children carry lanterns for Martinsfeuer, and eat Martin's pretzels and Martinshörnchen. In Sweden, a celebratory goose is slaughtered and eaten with the autumn apples. And in Portugal, the new-season wine is tasted for the first time, and chestnuts roasted on a bonfire, to mark the end of the preparations for winter.

Hugo was born in Coimbra, Portugal, and the cuisine of his birth country holds a place very near his heart.
For the past twenty years, he has moved around the world, cooking in a variety of locations and for varying audiences.
He's been the grillmaster at a traditional Portuguese fish restaurant in Lisbon and he's improvised excellent dishes for a group of engineers on an isolated construction site in Denmark. And probably everything you can think of between the two.
